This tutorial assumes that you have a jailbroken iPod Touch/iPhone with 2.0 or above firmware...
- So first you will need to install Winterboard from Cydia (search) as this is the best and safest app for theming your device. *I would advise against customize as it's a little complex and buggy atm.
- Secondly you will need to find the theme you want to apply, a theme could be anything from an icon set to a complete UI change.
- In the themes section in Cydia you will find many themes, to get them simply tap the install button as you would with an app. Once the install's finished return to the springboard and find the winterboard icon and tap it.
- All you will see is a list of the themes you have installed...tap the theme you want to apply and a tick will appear next to it. Then press the home button and your iPod/iPhone will re-spring and return to the lock screen. Slide to unlock and it should be changed...
------------------------------
What if I have found a theme on the internet and not in Cydia?
- You're screwed...nah if you know about SSH simply drag the theme folder to Private>var>stash>Themes and when you go into winterboard you'll see the theme name which is the name of the folder you dragged in.
- If you DON'T know about SSH then first go to Cydia and install 'Open SSH'.
- Now find an FTP program that supports SFTP (I recommend Filezilla for windows)
- Make sure you're device is connected to the internet and find it's ip address in the settings app under Wifi and choose the Wifi you're connected to and tap the little arrow next to it. There will be your iPod/iPhones iP Address.
- Open your FTP program and start a new connection, enter the IP address of your iPod/iPhone and...
Username: root Password: alpine Port: 22
Now connect and the first time it will take longer to connect because it's generating new keys.
If you're succesfull you should see your devices file system
Now find your theme from the internet and find the folder Private>var>stash>Themes and place it in there and apply it in Winterboard.
Done?
Yup...

Thanks to alxmarcond for this...
I have a firmware below 2.0 HELP ME!!!!
To get themes on your iPhone with 1.1.x firmware, install summerboard or customize from installer.app. it just depends on preference, they are both basically the same thing except customize requires a little less work. After installing customize, open the sucker up, wait for hella time, (it takes FOREVER to load the first time) click on theme browser from the main menu, click on the last button at the bottom and find a theme that you want. click on it to download and get info and stuff. then go to the first button on the bottom and choose the theme you want. With summerboard its basically the same thing as winterboard, install the theme from installer.app or download from the web and install the .theme folder pivate>var>stash>Themes.xxxxxxx[center] _________________

Ooooh i like that theme I'm not sure why it wouldn't apply the theme if you've done everything right so try repeating the steps and um... different theme maybe? _________________

| have u recently update your firmware? if so make sure that it is in the correct themes folder. U installed it from Cydia or manually? if from Cydia try repairing the download and if manually try redownloading and reunpackaging. |
