Normally when I create a file I set the size, and set the resolution to 300 p/i.
And save flat images as Jpeg's.
But recently, some of the Jpeg's I've saved, have come out slightly blurred with a lower quality, even when I've set them to 12 (on the scale when saving.)

Could anyone recommend any other file types, or settings I don't know about, that may offer a better quality image? Or are they all the same?

No quality is lost in a png image and it allows you save in transparency also.
Jpg is what you would use for things like photos.
Gif is for animation or small images. It allows you to save in transparency and in animation. Downside is the max amount of colours is 256.

Personally I think png saves in a much clearer quality than a maximum quality JPG with photoshop

But so big files, that's the reason of png being the favorite, it's the biggest quality posible in the less space.
